Zucchini and Oatmeal Delight

Zucchini-Oatmeal Fritters (Better Than Pizza!)

 

(Crispy, cheesy, and packed with veggies!)

 

 

INGREDIENTS (MAIN DISH):

 

1 medium zucchini (grated, excess water squeezed out)

 

1 carrot (grated)

 

5 tbsp oatmeal (quick oats or blended for finer texture)

 

2 eggs (or flax eggs for vegan)

 

2 garlic cloves (minced)

 

100g cheese (shredded, any meltable kind)

 

2 green onions (chopped)

 

Salt & pepper to taste

 

Olive oil (for frying)

 

OPTIONAL SAUCE (YOGURT-GARLIC DIP):

 

½ cup Greek yogurt (or dairy-free alternative)

 

1 garlic clove (minced)

 

1 tbsp lemon juice

 

1 tbsp olive oil

 

Salt & dill (to taste)

 

INSTRUCTIONS:

 

Prep the veggies:

 

Grate zucchini & carrot, then squeeze out excess water (key for crispiness!).

 

Mix with oats, eggs, cheese, garlic, green onions, salt & pepper.

 

Cook the fritters:

 

Heat olive oil in a pan.

 

Scoop spoonfuls of the mix, flatten slightly, and fry 3-4 mins per sideuntil golden.

 

Make the sauce (optional but delicious!):

 

Stir together yogurt, garlic, lemon, olive oil, salt & dill.

 

Serve warm!
